The only other setup I would recommend is a ceramic coated pan with a plastic spatula.  Teflon kills.<\/p>\n\n\n\n<p>You will also want a large steady wood cutting board and a sharp large chef&#8217;s knife (like the one Carmy uses on the Bear)<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2-3 Tbsp avocado oil<\/li>\n\n\n\n<li>1\/2 lb spinach (it&#8217;s a LOT, you can use less but it really cooks down)<\/li>\n\n\n\n<li>1 box\/2 cups of button mushroom<\/li>\n\n\n\n<li>1 red pepper, 1 green pepper, 1 onion<\/li>\n\n\n\n<li>1-2 tsp Minced garlic (I buy huge jars of this)<\/li>\n\n\n\n<li>4-5 artichokes from marinade jar<\/li>\n\n\n\n<li>Impossible burger (or other protein)<\/li>\n\n\n\n<li>1-2 Tbsp Teriyaki sauce (fresh is nice but for now you could just try a whole foods 365 teriyaki)<\/li>\n\n\n\n<li>Garnish of sesame seeds, sesame oil, sharp-angle-sliced scallions<\/li>\n<\/ul>\n\n\n\n<p>Teriyaki Ingredients (just mix them; makes a lot you can save):<br \/>1\/2 cup soy sauce<br \/>1\/2 cup sake or rice vinegar<br \/>2 tablespoons turbinado sugar (or less for minimal sugar content)<br \/>Optional: 1 teaspoon grated fresh ginger, 1 teaspoon minced garlic<\/p>\n\n\n\n<p>Instructions<\/p>\n\n\n\n<p>0) prep all the veggies: wash them, split the peppers with your thumbs, carve out the seeds and white parts, slice them into strips or squares; you&#8217;ll want a chef&#8217;s knife and a large cutting board to slice the shrooms, search for the technique of curling your fingers; slicing an onion is an art, search it too, you can do strips or squares; you can drain the artichokes by slicing in half and putting on a slanted board (optional but stir fries are best when not too wet)<\/p>\n\n\n\n<p>1) put 2 tablespoons of avocado oil in frying pan on high heat, with any good vent available running on med-high to high (I use high bc I am impatient but med-high can give a better browning)<\/p>\n\n\n\n<p>2) place protein in pan, brown it by turning as infrequently as possible, ideally 2-3 times over 5-10 minutes; the brown takes a while but gets overcooked fast so watch closely.  I like to chop it in the pan before it is done to get all the bits browned, but don&#8217;t wreck your nice knife, use the metal spatula&#8230;<\/p>\n\n\n\n<p>3) remove the protein to a plate, to keep it crisp while doing veggies (note you&#8217;ll want to move fast over the next steps, otherwise oil will smoke &#8211; turn down burner if you can&#8217;t do it fast)<\/p>\n\n\n\n<p>4) re-prep the pan with another 2-3 Tbsp avocado oil; give it a minute to warm, then drop in onions to start a nice sizzle :-) give it a bit to start towards the brown, but you want to brown the next step too so don&#8217;t let onions get too far ahead)<\/p>\n\n\n\n<p>5) add mushrooms and garlic<\/p>\n\n\n\n<p>6) turn a bit and let it start to brown<\/p>\n\n\n\n<p>7) add peppers, they are wetter but may also brown some<\/p>\n\n\n\n<p>Now for the wet parts: <\/p>\n\n\n\n<p>8) add 1-2Tbsp teriyaki, and lay spinach on top; teriyaki should start to steam the spinach; you can briefly cover the pan, or just gently turn until spinach leaves are cooked.<\/p>\n\n\n\n<p>9) plate veggies next to protein<\/p>\n\n\n\n<p>10) if you want, add a shake of sesame seeds, 1-2 tsp sesame oil, and thin-angle-sliced scallions for a fantastic garnish finish<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Gear: I use an iron skillet with a serious metal grilling spatula.
