Gear:
I use an iron skillet with a serious metal grilling spatula. The only other setup I would recommend is a ceramic coated pan with a plastic spatula. Teflon kills.
You will also want a large steady wood cutting board and a sharp large chef’s knife (like the one Carmy uses on the Bear)
Ingredients:
- 2-3 Tbsp avocado oil
- 1/2 lb spinach (it’s a LOT, you can use less but it really cooks down)
- 1 box/2 cups of button mushroom
- 1 red pepper, 1 green pepper, 1 onion
- 1-2 tsp Minced garlic (I buy huge jars of this)
- 4-5 artichokes from marinade jar
- Impossible burger (or other protein)
- 1-2 Tbsp Teriyaki sauce (fresh is nice but for now you could just try a whole foods 365 teriyaki)
- Garnish of sesame seeds, sesame oil, sharp-angle-sliced scallions
Teriyaki Ingredients (just mix them; makes a lot you can save):
1/2 cup soy sauce
1/2 cup sake or rice vinegar
2 tablespoons turbinado sugar (or less for minimal sugar content)
Optional: 1 teaspoon grated fresh ginger, 1 teaspoon minced garlic
Instructions
0) prep all the veggies: wash them, split the peppers with your thumbs, carve out the seeds and white parts, slice them into strips or squares; you’ll want a chef’s knife and a large cutting board to slice the shrooms, search for the technique of curling your fingers; slicing an onion is an art, search it too, you can do strips or squares; you can drain the artichokes by slicing in half and putting on a slanted board (optional but stir fries are best when not too wet)
1) put 2 tablespoons of avocado oil in frying pan on high heat, with any good vent available running on med-high to high (I use high bc I am impatient but med-high can give a better browning)
2) place protein in pan, brown it by turning as infrequently as possible, ideally 2-3 times over 5-10 minutes; the brown takes a while but gets overcooked fast so watch closely. I like to chop it in the pan before it is done to get all the bits browned, but don’t wreck your nice knife, use the metal spatula…
3) remove the protein to a plate, to keep it crisp while doing veggies (note you’ll want to move fast over the next steps, otherwise oil will smoke – turn down burner if you can’t do it fast)
4) re-prep the pan with another 2-3 Tbsp avocado oil; give it a minute to warm, then drop in onions to start a nice sizzle :-) give it a bit to start towards the brown, but you want to brown the next step too so don’t let onions get too far ahead)
5) add mushrooms and garlic
6) turn a bit and let it start to brown
7) add peppers, they are wetter but may also brown some
Now for the wet parts:
8) add 1-2Tbsp teriyaki, and lay spinach on top; teriyaki should start to steam the spinach; you can briefly cover the pan, or just gently turn until spinach leaves are cooked.
9) plate veggies next to protein
10) if you want, add a shake of sesame seeds, 1-2 tsp sesame oil, and thin-angle-sliced scallions for a fantastic garnish finish
