Burgundy Soup

Whole Foods seitan mushrooms onions tomato-puree

  • 2 TBSP soy/sesame oil
  • 1 1/2 c diced onion
  • 3/4 c sliced mushrooms
  • 1 tsp minced garlic
  • 1 1/2 tsp chopped basil (or 1/2 tsp dried)
  • 1/3 tsp pepper
  • 1/2 c dry red wine
  • 3/4 c tomato puree
  • 1 cup chopped seitan
  • 1 1/2 c water (–)
  • 1 TBSP barley miso
  • 1/2 tsp salt
  • parsley for garnish

Saute onion, mushroom, garlic, basil, pepper in oil.
Add wine, simmer for 2 min.
Add tomato puree, seitan and water, simmer on low for 30 min.
Dissolve miso into water and add, simmer for 5 min.
