Wow so many options. This usually consists of all the veggies I have when I receive another fresh box of Misfit Veggies and Papa Spuds deliveries. Too much goodness! Throw things like this into the instapot and have a blast… Add enough broth/water or the instapot may give you a burn warning…
- Much oil – avocado, olive, whatever
 - Potatoes, onions, cabbage (sauted)
 - Celery
 - Leafy greens like rainbow chard, collard greens
 - Carrots
 - Veggie soup stock, soup bases like potato leek soup, miso
 - Salt and pepper
 
Play around, eg:
- Veggie dehydrated “beef”
 - Pureed cashews
 - Browned and spiced tofu
 - Veggie bacon
 - Italian spices oregano basil parsley
 - Smoked paprika
 - Coconut milk
 
Pressure cook for 10 minutes or so and get out your spoon! My favorite way to accessorize is to drop in a handful of al dente capellini (takes 4 minutes!). Also fab with a nice chunk of bread doused in salt and oil. Or add some rice. Or other protein. The world is your oyster. :-)
