Tanya’s Chili

From my good friend Tanya Merchant. Dark beer, enough said!!

1/2 lb zucchini, diced
1/2 lb cremini (baby bella) mushrooms, sliced
2 onions, chopped
1 jalapeno pepper, seeded and chopped
3-4 garlic cloves, minced
1 1/2 tsp salt
3 Tbsp canola oil
28 oz can of crushed tomatoes
1 bottle dark beer
2 Tbsp chili powder
1 Tbsp cumin
1 tsp sugar
2 tsp oregano
1 1/2 tsp pepper
1/4 tsp cayenne pepper
2 cups water or vegetable broth
1 can corn, undrained
3 cans black beans, drained
1/2 can spicy refried beans (optional, to thicken)

Cook first 5 ingredients and 1/2 tsp salt in hot oil over medium-high heat, until veggies are tender. Stir in remaining salt, tomatoes, 1/2 of the beer, and next 6 ingredients. Simmer 30 minutes. Stir in remaining beer, broth and beans and simmer 45 minutes.

This is good stuff.
